Few farms grow it, and fewer still grow it well. Its lineage traces back to Gesha, and in the right conditions it produces some of the most sought after lots in specialty coffee. Passionfruit and mango lead, layered with melon and lychee beneath. Nestor and Adrian have spent years refining a washed process built around restraint rather than intervention, protecting what the variety already does on its own rather than shaping it into something else.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Process\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eSelectively harvested cherries undergo a short, controlled fermentation before pulping, then a second, slower fermentation that breaks down the mucilage with precision. Nothing here is rushed.
