The Coffee
Cocoa and dark cherry form the foundation, layered with goji berry sweetness and a lift of lime acidity. The profile is complex and structured, with clarity between each note and a composed, lingering finish.
Farm / Producers
This coffee is grown at Finca Don José in Costa Rica’s Central Valley and processed at the local Brumas del Zurquí Micromill. This is a family-run operation also in Costa Rica’s Central Valley, led by fourth-generation producer Juan Ramón Alvarado Rodríguez. Alongside his family, Juan has steadily invested in processing infrastructure and quality-focused practices, building a model that supports both consistency and community.
The Process
This lot is naturally processed. Ripe cherries are carefully sorted, then dried whole over several weeks on raised beds and patios. Regular turning ensures even drying, allowing sugars and fruit character to fully develop in the seed.
Why We Like It
It’s been a minute since we’ve had a Costa Rican single-origin at the Roastery, so it’s exciting to have this one on hand. We are enjoying its complexity and layered flavour, that remains approachable. The balance of sweetness, acidity, and depth allows it to adapt easily across brewing styles, showing structure and intensity as espresso while maintaining clarity and nuance as filter. On top of that, producer Juan is said to encourage the roasters who buy his coffee to roast with intention and wake up feeling motivated, cheerful, and with a desire to live and have new experiences. We hope to do Juan justice by roasting this coffee with respect.
