The Coffee
Sidra is rare. Few farms grow it, and fewer still grow it well. Its lineage traces back to Gesha, and in the right conditions it produces some of the most sought after lots in specialty coffee. This is one of those lots.
The result is a cup with unusual clarity for a washed coffee. Passionfruit and mango lead, layered with melon and lychee beneath. The body is silky, the acidity bright and structured, and the finish holds clean and long after the cup is gone.
Farm / Producers
This coffee was grown by Nestor and Adrian Lasso at El Diviso, in the mountains of Bruselas, Huila, at 1,750 meters. Nestor and Adrian have spent years refining a washed process built around restraint rather than intervention, protecting what the variety already does on its own rather than shaping it into something else.
The Process
Selectively harvested cherries undergo a short, controlled fermentation before pulping, then a second, slower fermentation that breaks down the mucilage with precision. Nothing here is rushed. The coffee is then washed and separated by density before a slow drying phase that locks in aromatics and stabilises the final cup.
Why We Like It
This is a small lot, and once it sells, it will not be back. The combination of variety and a patient, restrained process gives a cup with real definition: passionfruit and mango up front, melon and lychee underneath, and a long, clean finish.
As filter, it shows its tropical fruit at its most vivid. As espresso, it holds its structure while staying bright. A rare release, and an exceptional one.
