The Coffee

This Yirgacheffe natural is layered and quietly expressive, offering soft lemon tea sweetness, delicate juicy stone-fruits, and a refined honeysuckle finish. The cup is balanced and composed, with gentle fruit character supported by subtle structure and clarity.

Extended maturation at high elevation contributes to a deeper development of sugars and acidity, resulting in a coffee with both complexity and elegance.

Farm / Producers

This lot comes from smallholder farmers in the Choriso district of Yirgacheffe, within Ethiopia’s Gedeo zone. Farms here are small, often less than a hectare, and are typically semi-forested, with coffee grown alongside other crops. 

This intercropping approach supports soil health and provides natural shade, helping to slow cherry development and enhance flavour density. The varieties grown are traditional Ethiopian heirlooms, primarily Dega and Kurume, known for their nuanced and expressive profiles.

The Process

Cherries are selectively hand-picked at peak ripeness and delivered to the Haroberdame washing station. After sorting, they are dried as whole fruit on raised African beds for approximately 20 days.

During this time, the cherries are turned regularly to ensure even drying. This slow, controlled natural process allows fruit sugars to fully infuse the seed, developing the coffee’s soft fruit character and gentle sweetness.

Why We Like It

This is a distinctly fruit-forward Yirgacheffe, packed with vibrant character. Juicy stone-fruits and delicate sweet citrus lead the cup, layered with soft florals that add lift and aromatic complexity.

Despite its fruit intensity, the profile remains composed, with structure and clarity keeping the flavour in balance. As a filter, it highlights bright notes and florals, while espresso draws out deeper, jammy fruit with a rounded, expressive finish.
