The Coffee

Grown on the slopes of the Tecapa volcano in Usulután, this coffee is bright, layered, and expressive. Orange and cranberry acidity carry through ripe nectarine sweetness and a cocoa nib finish.

At 1300–1600 MASL, the combination of volcanic soil, cool temperatures, and steady mountain winds creates ideal conditions for slow cherry development and clarity in the cup.

 Producer / Farm

Los Pirineos has been farmed by the Baraona family for more than 130 years and is led today by Diego Baraona. The farm is recognised as one of El Salvador’s most respected producers, with consistent Cup of Excellence success.

The property is also home to the country’s largest private coffee seed bank, with more than 80 varietals growing across the farm.

Process

Los Pirineos is known for its progressive approach to processing and fermentation. Working alongside Project Origin since 2017, Diego has continued refining experimental techniques including carbonic maceration.

Drying takes place on raised beds positioned on a plateau overlooking the Tecapa volcano, where full sunlight and steady winds allow for slow, even drying and exceptional consistency.
